Place your order and go to the pick up points once the meats are ready for delivery... It's an extremely well run operation and the pick up points cycle very quickly. The pick up dates are roughly every month and a half, so you have to get your orders in.
They will do Custom orders and cuts and if you are looking for something specific or unlisted, they will do it for you. My next order I am getting a Half Goat with my Beef and Bison.
