I assume you have experience working as a line cook. Are you from a small town with little restaurants? In major cities with boatloads of restaurants, turnover in kitchens is insane and therefore there are always a multitude of restaurants hiring.
I remember when my wife worked as a server, it seemed like half the kitchen staff had changed every time I visited her in the restaurant. Except for the head chef, everybody in the kitchen wanted to get “promoted” to food runner because they got a small tip share. In hindsight, that was a pretty sexist workplace. Kitchen was 100% male at minimum wage, regular wait staff was 100% female who got really good tips.
