Well, we did end up at Kabuto and got the $120 omakase. Memory isn't perfect, but I'll do my best.
* sake aperitif (a shot of 2% abv blackberry sake and crushed ice)
* appetizer (some marinated bluefin tuna and some marinated shrimp, clam, squid mixture)
* 5 types of sashimi
* 5 grilled items
* 12 pc nigiri (10 fixed + you pick 2)
* o-toro hand roll
* miso soup, either w mushrooms or bone-in fish
* dessert (either raspberry sorbet, green tea cake w red bean icing, or strawberry shortcake)
Basically my view is:
* all varieties of bluefin tuna (zuke, o-toro, jabara-toro, ...) were incredible
* the uni was super creamy and delicious, though not the best flavor uni I've ever had
* the mackerel was really, really good
* also really enjoyed the salmon roe, which was better than most I've had before
* other mild fish was good-not-great. Nothing really blew my skirt up, though everything was done well
* Grilled items were ok but would not do again. Had kobe tataki, which tasted like every other tataki ever, though the meat was slightly more tender (but still they cook the beef beyond med-rare so...). There was seared o-toro, which I just don't understand. O-toro is basically perfect raw, and I think they over-seared it anyway. Cooked trout with a sesame sauce (this was very good, but I wouldn't make a special trip for it) served with a small crab you were supposed to eat whole, shell and all (the crab was really tasty once you got over the texture). There was a miso-marinated mackerel, which I enjoyed. And a fifth thing I'm forgetting at the moment.
* Hand-roll was a hand-roll with good tuna inside
* soup was good, but it was miso soup
* dessert was good
I'm not disappointed, but I've had better sushi, even at around this price point (though not in town,
Ushiwaka Maru (pics of everything) fit the bill nicely and did a great omakase there for 4 out the door for $900 iirc including booze, this was just north of $800 for 4, and they are in a considerably higher rent district). The variety at Kabuto was lacking a bit, even though the quality of the tuna was incredible. The other options were just kind of uninteresting.
The few bottles of sake we had were good, and the experience was nice. I'll be back for sure, and it may well even be the best sushi place in town for the money, but it fell a bit short of my own (possibly over-hyped) expectations. There was plenty they could have done better. Hopefully gen-san will show us all how it's done in a few weeks.
