Really good order, two things to consider though. Bouchon is pretty expensive and may not make the list only due to price (but is F*cking awesome - it is in fact great value), and Monta now has really good competition with Soya Ramen - I switch back and forth between these two regularly, I love them both equally. Looking forward to eating with you again this summer, we tore it up in DC!

The most knowledgeable guy in town about BBQ might be Bryan Forgione at Cafe Society. You might know of his more famous brother Marc or his dad Larry, they get all the press but Bryan is super cool. Its a shame that his BBQ experience is going unused at Cafe Society. Stop by Society and introduce yourself, he is really approachable, he can tell you exactly where to go in this town. Had the Grand Krug tasting menu last night at Twist, the champagne alone was over 1K/head, the single most expensive meal of my life. Pierre Gagnaire was in the kitchen, they sat us at the chef's table, it was fun watching him as he spent most of the night walking around taking pictures of the new menu. We chose to allow Chef Gagnaire to choose our dinner path, they deviated slightly from the tasting menu but it was pretty similar. The most amazing dish of the night was a steak tartar with cuttlefish that looked like it might be the most underwhelming dish of the evening - but it was the real rockstar by a mile. It was like eating the fruity pebbles version of steak tartar... I was blown away by the citrus notes, I will be dreaming about this for months to come.
At the start of all Twist meals there is a deconstructed plate which is used as a decoration, it is the theme of the room, the look of the plates are recreated on the wall. At the end of the meal we were all given signed copies of the plates, mine was numbered 40/50, apparently when you drop almost 4K or three people you get the plate as a gift, its a good symbol of the deconstructed dishes ;-)
Twist is the real deal. This is my third meal there, and I anticipate many more. I prefer Twist over Robuchon (it's closest "competitor" in Vegas), it is the most palate challenging yet whimsical dining experience I have ever experienced. A++
