I’ve been there 15 times, mostly at a discount or free, but the service is always good to great, atmosphere is cool, and the food is just so much better than it needs to be. Obviously if you want the absolute best of Ramsay you go to London, but he also has really nailed the perfect vibe and food for a nice night out in vegas.
Lobster risotto is beyond killer btw.
I've only been 4 times, but I think meh encapsulates HK. Great location and as you said the staff is good and a great atmosphere, but the food is just ok. I will say it's very consistent, ime.
It's been a while, but I'll suggest Bardot for the Wellington. The recent mention of Delilah might be worth a look. Both are pricey, though.
