I strongly disagree with this. Craftsteak was fair, at best. I've had several other steaks in Las Vegas that were far superior to the "Angus" beef served here. (I'm from Chicago too for reference) As far as value, their prices are no different (for ungraded beef none the less) than many other LV steak houses.

Lunch at Tequila Bar and Grill inside Bally's.
Had The Colonel’s Salad with Flank Steak Strips.
Mixed Greens (spinach leaves), Pecans, Green Onions, Dried Cranberries and Red Peppers, Served with Honey Dijon Dressing.
12$, paid with Total Rewards Card so no tax. Very tasty, good portion for one.

Ditto about Craftsteak. Overrated and overpriced for what it is.

Also if you're as sick of Grand Lux as I am and don't want the 1500 calorie gut bomb that's like 90% of their menu, Noodle Asia and First Bar & Grill are decent options near the poker room.

And didn't Venetian open a gastropub of some sort? Any reviews on that?

Disagree, I've eaten in nearly every high end steakhouse in Vegas and I think Craftsteak is the best in terms of quality, and is reasonably priced compared to some of the other places that offer kobe. You don't need A5 wagyu but I def disagree with getting angus/usda prime over kobe when you are at a steakhouse as nice as Craftsteak, but that doesn't mean you have to go nuts dropping bills. I've eaten most of the menu at Craft, and I will say that the $69 kobe skirt (cheapest kobe cut on the menu) is a sick deal. The rib eye at $105 is one of the better kobe rib eyes that exist in Vegas. You don't have to go balls out either, the 24 hour slow roasted short rib is one of the best items on the menu at Craft and only $39. Also, if you are Craftsteak, make sure to order monkey bread for dessert as it is one of the best desserts you can have in Vegas. The kale (seasonal) is very nice also when its available.

Noodle Asia is way better than Cafe Lux. The Szechuan spicy beef soup is excellent and like $13. Many of the other dishes are kind of meh, but at least they generally season their food pretty authentically rather than all the other boring chinese restaurants you'll walk into.

I can use some help. I am staying offstrip and have car access and I am looking for some recommendations that are offstrip. I am looking in the category of a Rosemary's (RIP). I'm not looking to spend a ton on food, but I'd like to try and get 2-3 decent dinners on this trip without going over the top. Links and review sites also welcome. I don't need too stuffy, but a little stuffier than Batista's would be good. Thanks in advance.

If you want something like Rosemary's the answer is 100% Todd's Unique Dining. One of the last few fine dining places offstrip but they were probably better than Rosemary's in the last few years anyway.

I was curious about what 'al pastor' was, so I googled it for LV and this is what came up. Maybe it will help you?

You really can't go too wrong with Tacos Mexico. But the only way its anywhere close to UNLV is when there is zero traffic. The only locations I know of are on LV Bl near Stratosphere and one on Trop near Wild Wild West.
