not sure if it's still the same, but kabuto used to only have two serving times, something like a 5pm and 9pm. reservations are pretty much mandatory. ask for a seat at the bar.

as for new(ish) restaurants, i seem to remember Lamaii getting solid reviews from folks that had been to Chada.

Oh man I haven’t been to dakao in a few years. Good lunch idea. Just did dinner at Cornish Pasty the other night. Buddy of mine is reopening 18bin (bar/brunch, used to be tacos huevos and then downtown crown) across Charleston on 9/4..

Lamaii is great, I was KO’d for a couple *days* after my only visit (haven’t been doing much dining out, no business dinners and two kids) because something we had was so accidentally spicy but soooo good. Not a whole lot of must hits opening now, but I wouldn’t have considered anything on your list a must hit so you might just be looking for random solid local joints, in which case there are so many.

Have you tried Hachi or Raku? Would give those a look. Ichiza used to be my jam but I think the world advanced and they stayed where they were. Still good but these days I can go to nicer places and get better food imo for comparable price. Wasn’t a huge fan of Izakaya go at the beginning but have 180’d on that. Closed indefinitely last I saw ostensibly to protect workers from covid though. Hachi is my go-to escape w the wife for casual. Raku is maybe my favorite restaurant in town. I like making an event of it - the more the merrier. Zen Japanese curry is one of my favorite places to take people from out of town for lunch. Simple but delicious. They don’t **** around w spice so buyer beware.

These aren’t new just FYI in case youvemissed them along the way. In case you didn’t notice I steer toward asian. But if you have a cuisine in mind lmk.

I tried to do raku and was shut out couple times...id certainly consider it vs kabuto..

Raku's menu didnt jump out at me... if one suggested it over kabuto. What would be in the must orders.

Will try to get to lamaii...

Generally the more blue collar/street food haunts appeal to me, so i gravitate to it. Last time out did a tasty type bananas adventure at bazaar meats, which was amazing . Had some super eye opening stuff.. but a $2 el gordo taco would come in ahead

Best news of 2020 - Blood Bros BBQ from Houston is coming to Resorts World. It will be by far the best BBQ in Vegas. Speaking of which, Wild Fig BBQ in Summerlin is legit, dare I say better then Rollin smoke and Jesse Rae’s? Their brisket and smoked pastrami is the closest thing to Texas and I think it’s the only place in town that has a real smoked pastrami.

Got it delivered for first time on Saturday. My girlfriend is from Amarillo and considers herself an expert on Texas bbq and she was super impressed. The sausage, brisket, and sides were the real standouts for me, but everything was absolutely great besides the ribs being a little dry. I personally think sin city smokers are the tiniest bit better overall and she thought big bs is clearly better. Either way both places are head and shoulders above any other Vegas bbq

Lamaii is upscale Thai, but it's excellent.

Kabuto vs Raku is a bit apples and oranges. I don't go to Raku for high end sushi (though I almost always order one of their sashimi specials). Kabuto I go and I appreciate the delicate art of sushi for a couple hours. Raku I go, drink, laugh, and have outstanding food with friends. If there are 4-6 of you, try to get a private room.

Ok so what do you order?

Dinner for 2 hungry guys:
oyaji tofu (always this, it is like burrata), some apps like the poached egg w sea urchin and salmon roe and today's ohitashi, a half-dozen or so skewers off the robata grill each but *definitely* including the scallop (i could just eat this over and over all night - dont forget to drink the juice/butter but be careful the shell is hot and will burn your dick off), i usually dont get rice or noodles but occasionally a yaki onigiri or ikura don, and then i order a couple of things off the specials board maybe 1-2 sashimi or the fish 2 ways (though it's always good, I almost always wish I'd just ordered more sashimi) or wagyu or idk its whatever you feel like. And maybe a karaage if you're super hungry or drunk or both. And probably a(t least) half bottle of sake (they have a ~15 page sake list) and a pitcher of beer. Pitchers of beer are large.

For more people I'd just scale. The above are really my go-to dishes.

Palace Station Oyster Bar definitely open, but you get a pan roast there. Their oysters are pedestrian, pan roasts are amazing.
