For a "best of" LoS, maybe something like:
Nam kao tod
tom kha kai (soup, other soups are also v good)
khao soi
one of the jackfruit curries from the northern thai menu
one of the dips from the northern thai menu (nam prik hed, etc.)
cispy duck panang

That's probably for 3-4 people. For 2, nam kao tod, soup, jackfruit curry (there are two, flip a coin), duck panang. Ask them what to pair with, but a Gruner Veltliner, Gewurtztraminer, or a dry ("trocken") riesling would be my personal choices. They'll have a good bottle at whatever your price point is.

The recommended 2 person menu is what I've had there as well (replace jackfruit curry with some random curry). I'm one of the few that isn't enamored with the nam kao tod, but both my date and nearly everyone on this board loves it.

Individual tastes definitely vary, and mine have definitely changed over time (I didnt love the jackfruit the first time i went -- my god it is probably 11 years ago now), so totally YMMV. Highly recommended to go with friends and order one of everything

Also, they do not **** around with spice there so err on the conservative side. I've certainly heard "I would kick it up a level next time" but always coupled with "but it was still super good." By contrast i've also heard "holy **** my mouth is on fire"

I too don’t really love the Nam Kao Tod. I really hate that there’s no Chada and now I have to Lotus instead.

Is Lotus going to be busier now that Chada is gone or will most people just go for other stuff? Would suck if you needed a reservation at Lotus in the future.

Guessing yes. But also last time I went into Lotüs/Roys on a Thürsday around 730 there was a 2 hour wait. This was only a couple weeks post-reopening but still jfc. So we went to Chada.

I've been there. I enjoyed it, but was there almost by accident since it was open 24 hrs. on that particular evening, I was walking by at 3 AM, and really wanted a steak.

I wouldn't call it a "destination" Vegas steak house, but I've been surprised before. One of the best steak dinners I've had in Vegas was at the smaller of two steak houses in the Freemont, of all places.

And ironically enough, one of the appetizers at the Binions steakhouse was really enjoyable...the Chicken Fried Lobster (exactly what it sounds like...12oz tail flattened and chicken fried). It was actually enough to be a meal by itself and far less than what I would have expected to pay if it were on a menu somewhere here at home.

From the reviews on yelp and tripadvisor the Redwood at Cali seems fine for the pricing, why does it have such a bad rep?

It's not a bad rep as much as no one makes the trek to Cali to eat there. There are a lot of good restaurants kicking around, especially downtown.

This forum is very particular and informative about their Vegas food - so much so that if you were just to go by posts in LVL you'd think every restaurant in Caesar's is the worst. People here have no time for decent but overpriced food.

Ya if you're in California go to Aloha Hawaiian specialties followed by Lappert's Or after midnight you can get the Oxtail soup.

Definitely never been to the steakhouse, though I have been to the noodle shop on a comp and it was ok for free.

It doesn't have a bad rep so much as it doesn't have a rep at all. There are tons of steakhouses, pretty much one at every hotel. I'm sure there's nothing about it that sets it too far apart from other places.

Most of the talk of Fremont Street steakhouses seems to be Top of Binion's, Oscar's, Andiamo, Vic & Anthony's, and Hugo's Cellar. Without looking at the menus, I want to say Redwood is somewhat cheaper than those places. I suspect it is decent value and a good choice for someone who is sensitive to price but wants a steak but has little interest in the Tony Roma's $11.99 steak and lobster special. I almost ate there one time when I was staying at the Cal, but it was closed. It didn't look like it had anything special in the way of ambiance.

Ate at the Noodle bar last year with a friend who likes the place, and saw the Redwood when having a look around.

Went back a few days later for dinner, and thought it was good for the price. Think 3 of us got out for about $300 with ~20% tip. That was for 3 courses, and a couple bottles of wine, iirc.

Nothing special, but a good meal.

I had another solid meal at the Lucky Penny at the Palms. It beats any Grand Cafe by miles and I wish they had one at my local Sunset Station. Thick French Toast and Sausage Links were perfect as always.

I actually don't mind any of the options at the Cal, they have a really good Prime Rib Special, it's like $11.99 for 12 oz, with salad, potato, and strawberry jubilee.

For steakhouses, downtown Id pay the extra %25 difference from Redwood and go across the street to Andiamo's it's better than most strip steakhouses.

They (probably Bank, specifically) care about their own happiness more than they care about your happiness. Being busy kind of sucks.
