Just had one of the best meals I've eaten in LV (and I've eaten at several different restaurants at all the good properties). I went to Sage inAria and had the smaller tasting menu at Sage in Aria, with the wine pairing. Here's a pic of the menu of dishes they served:
They started with some tiny dish on a spoon that tasted amazing but I can't remember what it was called. Then came the beef wagyu tartare dish. This is my new favorite single dish in LV.
It was served with a dry white French wine I failed to photo.
Next came the Scallops dish. Oye it was good.
It was served with an Italian red wine
Next up was a brisket type beef dish that had been cooked for 48 hours using a cool vacuum process. The meat practically dissolved in your mouth it was so soft. It was paired with a French red wine.
Last up was a lemon cheesecake that I failed to get a picture. It was served with this very sweet Italian sparkling white:
