We usually bet between ourselves but I'm liking the creativity of your response. We alternate choosing heads up games in a best of 7 format for a set amount of money, and sometimes throw side bets in.

But betting on teh children is next level and my mind is racing now. There's no real limit to what can be wagered on in that dystopian nightmare of a Midway.

I did a mini-version of your first challenge a couple years ago for Total Rewards Quest for Rewards. You got a "badge" worth I-cant-remember-how-many tier credits for doing certain things like earning 25 tier credits in slots, 25 tier credits at table games, etc., and you could get separate badges per casino, so one morning I woke up way earlier than the rest of my group and hit Flamingo, Bally's, Paris, Cromwell, and PH in one morning (I'd already earned the badges for Harrah's, Linq, and Caesars).

It was fun.
