Many many many thanks to LVL for all the great reviews of Kabuto. We would have never found this place on our own. We had enough trouble even finding it with the reviews and the address in hand. The cab driver had no clue where it was and as we got closer suggested Jack in the Box instead. Even once we pulled into the parking lot we couldn't see it, he then suggested Raku. I had to coax my wife out of the cab. Apparently she is not a fan of China Town strip malls with massage parlors. We were parked almost directly in front of the restaurant and it wasn't until I was out of the cab that I could even find the place. Nice and subtle.

The staff were extremely warm, welcoming and attentive and we were treated to what might be the best service we have ever received at any restaurant lifetime.
We both opted for the large Kabuto Omakase and ordered a bottle of Sake at their suggestion. The name escapes me but it was light and floral. The second bottle we had later was also light and floral and may have been called Juto. Neither of us are big sake drinkers but both were quite tasty and went well with the food.
They started with a 10month aged citrus sake with crushed ice which was delicious:
The appetizer was a mixture of marinated clam, squid and mackeral with tasty cucumbers with some seaweed tucked in there as well as a couple pieces of bluefin tuna. The tuna, cucumbers and seaweed were awesome. The clams were likely my least favourite dishes of the night but that is due to personal taste not their dish.
Next came a plate with five types of sashimi. The shrimp was by far the best tasting shrimp I have encountered. Incredibly creamy. Both the tuna and the shrimp tasted like they had marinated in butter for a few days. In a really good way. The shrimp was from Canada. There was an orange clam with this course as well that was very tasty as well. The whitefish was okay for me.
A plate of grilled items followed. Grilled otoro with divine sauce was amazing. The kobe beef was quite good. Clams in mushroom broth was hit and miss for me - again I wasn't a huge fan of the clams (with the exception of the orange clam on the sashimi plate), but the mushroom broth was delicious. The other two pieces were less memorable for me.
Then came a string of the most delicious nigiri I have encountered. I missed grabbing pics of the next few pieces but they were simply delicious. Neither of us had tried traditional edomae style sushi before and we were blown away. I snagged a pic of the fourth piece. Don't recall what it was. It was good!

Hot sweet omelet. Loved it but should have waited another minute or so before eating. Came dangerously close to ejecting it due to high temperature.
Then we had our option of a couple more pieces of Nigiri. I opted for o-toro and chu-toro while my wife opted for 0-toro and giant clam.

Then came an otoro handroll (delicious) and a choice of bone-in-fish or mushroom miso soup and we both opted for the mushroom. Very good.
Dessert was a choice of raspberry sorbet and strawberry crepe layer cake. I opted for the sorbet because I was concerned I would explode at that point. I had a bite of the layer cake and it was amazing! Something like 15 crepes with strawberry goodness layered in between.

Then we got a cab and went home. The end.
All in all, AMAZING. Highly recommend. Food was incredible. Atmosphere was incredible. Service was incredible. Win win win. Part way through the meal my wife started lobbying to go back there Friday or Saturday night. She claims this meal as her best of all time. It may be for me as well. Easily in my top three for sure. Maybe top two. Maybe top top.
