Seth Palansky appeared on Quad Jacks radio and defended the practice of adding a staff appreciation fee (though he used a bit of sophistry in calling it a "dealer appreciation fee"). He claims that it's all spelled out on their website and that no one "puts a gun to the head" of players to pay it. He also implied that your discussion of it was (paraphrasing) hyperbolic.
He claims that because much of the tournament staff travels from out of town, the extra fee was needed to cover travel expenses.

Pretty sure they are aware of that, because one of them was posting in that thread and how he seemed to have disdain for the podcast when he mentioned it.
