I have been reading this thread and congratulate you guys for doing so great.
I have recently decided to do this as well a few weeks ago and started doing some research.
I found a couple good sites (feel free to remove links if its not allowed)
myfitnesspal.com works like weight watchers, but its free, there is also an app that you can download. It lets you set your goals and then track all of your caloric intake. It even has a bar scanner that tells you how many calories are in your products. (If you join, feel free to add me as a friend, siberianex)
Another site is very cool, it is a weigh simulator, where you enter your current height, weight, and age and also your goal weight and the normal physical activities you do (even if its nothing, sedentary level).
It basically figures out your current BMR.
Basal Metabolic Rate (BMR) is the number of calories that your body burns on a daily basis to maintain your lean body mass. (This is the amount of calories they would give you in a hospital in case you were not able to move).
So if you increase your physical activity and decrease your caloric intake, it will give you a deficit of calories you need to lose on an every day basis to reach your goal. Play around with it, its pretty cool.

As far as me: I am 5" 10' and weigh 221 lbs 45 yrs old, I started with 230 lbs 7 weeks ago, with a goal weight of 175 - 180.
I currently try to cut my caloric deficit between 500 - 750 calories a day.
My goal is to net 2000 calories a day to reach my specific goal by end of Dec 2012. BTW a loss of 3500 calories = 1lb (so 500 a day would lose you 1lb a week)
I currently walk at least 1 mile a day (~15 - 20 min) for 5 days.
I play racquetball for about 1.5 hours (once a week) GREAT BURN.
I take a spin class for 1 hour (once a week) Decent Burn.
I also play roller hockey about once a week for 1.5 hours.
I have added all of these activities and I have to say my endurance has been a lot better. No more getting out of breath just by walking 1 mile.
