In many years of traveling and staying in hostels I can gladly say that I've never had anything stolen from me besides my sandals. And I'm terrible at locking up my valuables. I've probably ran really good though, who knows. But I wouldn't be worried about the hostels.
Also for the volcano stuff, I would say Indonesia is your best bet if you wanted to go that route. There are few volcanoes on the island of Bali and then you've got Rinjani, which is a cool 3day 2night hike, one island to the east. You've also got Mt. Bromo and the sulphur mines of Mt. Ijen, one island to the west, on Java. And if you're looking for a place that is the most different from the rest of SEA (both landscape wise and culturally) I would recommend East Java.
