I think our opponent will check back sets a decent percentage of the time on a JT2 rainbow board, especially because by having those JJ and TT they block hands an opponent would otherwise call a c-bet with. That's why the raise on the turn those hands, along with 33, all should be in our opponents' range. (I could see betting 22 and maybe JT along with good Jx hands as c-bets instead.)

The other problem with 88 is that if our opponent checked flop with a draw (with the intention of c/r) blocking 98s is not the best.

As I noted, I don't think calling turn with the intention of calling it off on certain runouts is an egregious punt or anything, but I think in general we can fold third pair to a raise (with two players left to act) pretty comfortably.

I'd include JT there as well, which is mostly indistinguishable from JJ and TT value-wise and blocks even more Tx and Jx. I think all three usually lead but can and probably should check the flop sometimes.

That's fair. That realistically is only a couple of additional combos though if our opponent is only opening JTs pre. But the point is taken - that you can't discount top and second set (and top two) from checking back that flop.
