Trying to read those scenarios for what would have happened is super unreliable and heresay from a logic point of view. I wouldn't try to analyze your game like that to say it WOULD have gone that way, because it requires that first player to stab AND that other player to raise, a situation that you can't say would happen one way or another. More importantly -- if it would have, it's only because in this situation he had a certain hand.
This situation will come up many times for many people and the villain won't always be holding the same hand as he did here. That being said, once again, I think it's dangerous for you to analyze your game with situational aspects making up your mind about what decision you should have made.
But... if that does happen, and it goes bet raise on the flop, you can easily 3bet the flop or shove or whatever if you want to.
I still think checking back is superior.
