Fair enough - for the type of dish in the photo above, though, the s-t-v ratio is OK - just do the aromatics and the longer-cooking vegetables first. Once you add tomatoes it's just boiling through, so s-t-v- isn't as important.
Another option is to get an enameled dutch oven: the cast iron will carry heat up the sides of the pot.

For me the order is usually like this
Oil
garlic + onion
meat + spices
veggies needing longer time (carrots and stuff, I newer use potatoes...)
some kind of liquid (beans in water, canned tomato)
veggies not needing as long (avocado and such)
Let cook together for like 15 minutes...

This is exactly what I meant. By the time the volume of the dish starts to get large, you're adding liquid to the dish so the heat transfer medium is the liquid, rather than the oil between the pan and the ingredients.
As far as using a stockpot for the first part of the dish, if you feel that it's cramped, just use higher heat and keep stirring it every couple minutes.

Here's my pre bed time meal:
1 cup dry cottage cheese
1 cup 2% milk
2 cups fresh mixed greens (veggies)
1 tablespoon olive oil
4 fish oil caps.
IS THIS GOOD!??!

It was from hall and it way quite tasty.
Then I ate lots of biscuits because they were free. I am so **** at diets.
I had a protein shake after my WO though. And I got an invitation to join the powerlifting club, which is cool.
