By far the best way is to just hop on the metro red line train at the Sunset/Vermont station and ride it for 10 minutes to the 7th/Metro station. There are three exits to that station: Hope, Flower and Figueroa. Go out on Figueroa, cross over 7th and walk four blocks, crossing over to the right side of the street and there will be Staples. It will be $1.75/per person each way to ride the metro, which will be open past midnight. It's a nicer area of downtown now near L.A. Live and walking along Fig will be safe. You can also switch to the Expo or Blue line at 7th/Metro for no extra charge and ride it one stop to the Pico station, from which you will be able to see Staples. But it's not really worth doing for the two blocks closer it will get you.
You could get dinner in that area before or after the game. You'll be walking past the L.A. landmark diner The Pantry, which won't be anything that special but it is famous. The Counter next to the metro station on 7th is a place you can get a quick (and good) burger before heading off to the game. Or you could opt for a little more pomp and circumstance and go to Bottega Louie, which is right across the street from the Seven Grand bar, for Italian food and the most outrageous dessert display in town.
Obviously, best time to drive to Vegas is at night. I think the go-to food stop for people driving from L.A. to Vegas -- at least for me and all my friends -- is the In-N-Out in Barstow. Just take the 210 to the 15 and ride it all the way over.
There aren't really college areas with good nightclubs/bars in L.A. You're better off in Hollywood. My favorite place to get a drink is to get an old fashioned from the Seven Grand Whiskey Bar that's just a couple blocks from that 7th/Metro station.
