Not sure if it has been mentioned but Rocket League would be a good choice of game for them. It's an easy game to play, is lots of fun and they can play online together from the one console. The online part is also really good as it has a ranking system so they'll mostly play with people that have similar skills.
Make sure you update your console and the games before gifting so they can actually play on Christmas day. If you don't they might spend most of the day looking at download and update screens instead of playing.
PC clearly gives best bang for buck, and additionally gives you bonding time with them by building it together, and they can use it for useful stuff like homework too.

Skylanders is that huge money sink collectible "game", right?
WRT updates, if you can, put the disk in for whatever games you got (if the games aren't sealed/new) so it can install to the hard drive and perform whatever updates may be necessary.

Just update/install the games anyway, I'm sure the kids won't care if they're not sealed and they won't spend the day updating them themselves. The updates on Xbox can be really long for some games.
Thankfully the scam is dead. Disney Infinity is no longer in production and the last Skylanders tanked so knowing Activision it's not going to be long before they forget about it.
Ugh that's really on you. There's so much Skylanders stuff out there that even if they stopped supporting it there's enough of a backlog(and toys to buy) to keep them occupied for a while.
With that said, I wouldn't buy it just because of how much money and space they take up. If they get a taste for Skylanders then they might want Lego Dimensions and that's a real money sink. There's plenty of other games to keep them happy.
If you do want to go with Skylanders though, jump on ebay and look for people selling packs of toys. There's no shortage of people wanting to get rid of that stuff.
