This game is so funny, after maybe 30 minutes I'd had exactly one run where I beat my previous run of ~31.9 (down to 31.6), then I finally put in the time above, while spending the last 20 feet of it with my bike nearly flipped over and expecting the game to declare me "crashed" at any moment.
For the part above, the best advice I have is:
1. Coming off a restart, I try to come off this ledge fairly slowly while pulling back so that as I go over the ledge, my leaning keeps the bike level and when I go off the ledge, my bike is a.) already in perfect position as it hits the ground to start accelerating asap, and b.) is as far to the left as possible so I have as much room to accelerate as possible before starting the jump
2. You'll want to land here with your front tire in the air (doesn't necessarily have to stay there but you'll lose less speed if your back tire hits first), and then it's basically an exercise of maintaining as much of your momentum as possible and not letting the collision with the ground slow you down at all
3. I don't even know if it's possible to make it on top of here cleanly, so what usually happens is that you want to hit your back tire high enough on the side of the cliff that your momentum snaps the front tire over the top, at which point you lean forward as hard as you can and hope the back of the bike gets pulled over
