The two Id recommend to start off with are either greenskins or dwarfs, theyre basically the two biggest rivals so you can play one then the other in your next campaign and you'll learn a lot, etc.
Greenskins basically always want to fight or they suffer attrition (as if they fight each other when theres no enemy army
), but if they engage in battles a lot and win enough they even spawn a "waaagh", basically a second AI army that follows you. You can imagine how the greenskins are just one giant red unstoppable snowball if you can get things going your way.
Dwarves dont have cavalry which is one of the most fun type of units in the game (you can basically run through units and send them flying and then regroup of melee and go charge something else) but they have very high leadership(morale), which means they dont rout easily/run away in battle.
Right now dwarves kind of have boring lategame due to the fact that thier lategame technology units are pretty damn bad for the cost and upkeep (patch soon might buff them a bit). But theyre super solid early. They can trade for economy like the vampires and empire, unlike the greenskins or chaos. Also their position and diplomacy isnt bad so even ifi their lategame composition sucks theyre still not the hardest to play and win a campaign with. Probably the simplest faction to start off with.
Both of these factions also very often use a ton of "underway" passage, basically they can move underground on the campaign map to travel through obstacles and dont suffer attrition in some terrain. But they can also catch either in the underground and once you take a fight there theres no surviving troops for the losers.

as Empire I think you should just go and crush that first secessionist army.
Go and fight them on your first turn, then stay just barely in your territory as they run away to their settlement. By doing that you can see that your troops are recuperating, then next turn finish them off.
The one cavalry that you start off with is EXTREMELY strong against early units, super high armor and charge bonus. Use em wisely n' ****.
ps: one of the most important thing to learn early is how the charge/fast movement command works (R)
