Hoi3 is a fantastic WW2 simulator, that has the option to mod it to perfection. Be warned tho, it's really complicated and heavy on micro, but is super deep! The pack also lacks the latest expansion ( "Their fines hour"). The expansion is ace and you should def think about getting it. Very rewarding game if / when you win.
Victoria 2 is the evolution ( in timeline terms ) of EU. Has the option to play a big part in the US Civil War ( as the expansion suggest with the name ), but the entire world is simulated, not just the US. Also possible to mod to perfection. Lacks the second and latest expansion ( "A heart of darkness"), never played the expansion tho, so can't comment.
The other games are not worth it imho.
If you like Paradox Games, I highly reccomend getting a full Crusader Kings 2 Package. It's imho the best game for a newbie as fare as accessibility / depth goes.
