I haven't played Dark Souls, only Demon's Souls so this is based on what I've read but I think you'd enjoy Dark Souls more than Demon's Souls. In Demon's Souls when you died you had to do the entire level again, which sometimes included 5 or 10 minutes of not-that-difficult gameplay. You're never just walking but not all enemies were equally deadly.
In Dark Souls I think there is a new save/checkpoint system where you have spots in the level at which you can save. So now if you die you will spawn much closer to where you died. This allows them to make the game even harder because you don't have to repeat the entire level just to get to the end-boss for the Xth time.
