the main, and huge, difference between CK2 and EU3 is that in EU3 you are a nation and have the stats of the guy currently ruling, while in CK2 you are a single guy.
In Eu3, you will never lose land because the ruler died unless you lsoe a pretender war, while in CK2 you can lose entire regions or even the entire game if you have no valid heir. You jump from person to person after the death of your current guy and you can interact with EVERYONE. That's also huge: everyone in CK2 is a real person you can kill or marry or whatever. CK2 is less about wars and more about beeing a real person.
