So no specifi reads on our V here, only got 7 hands on him (57/29/0) he folded everything OTF so far:

This V looks fishy we can assume a few more Ax hands specially suited in his range and with the only read being that he folded 100% OTF so far, i think check fold is our best opotion but possibly a small bet/fold around 1/4 pot to get value from worse with the intention to check almost any turn apart from J

By 3betting preflop you're pushing CO out of the pot and you don't want to face a 4bet so I'd much rather call pre. As played, check flop, by betting you fold you most worse hands except worse PPs and all better hands call.

Can't really x/c with stack sizes. Not sure what's best play pre or OTF. Im checking flop and if it checks through im happy to get the rest in.

I just bet it and get the money in, sometimes he folds, sometimes he calls with weaker hands eg 88-TT and sometimes he beats us

Not sure about calling with JJ OOP considering stack sizes and vs 2 players after a small 3BB squeeze.
QQ/KK or AQ/AK we can assume V opens pre most of the time and since we are blocking Aj in my opinion we can assume that his range is most PPs TT and below, AT, AXs

3B is fine, SB looks like a decent reg who is probs aggro enough in this spot to GII w JJ here anyways. Top of flatting range will be something like AJ and 88.
