I hate chicken breasts. They don't hold flavor, and they're only worth a damn stuffed or poached and then fork-pulled into chicken salad.

Otherwise, give me the thighs and legs.

OK guys i need help tonight... im making some stir fry with some pork roast, snap peas, mushrooms, carrots and GREEN PEPPERS on rice.

i can only make one halfway decent asian sauce....and to me its just kinda meh....

so ...ITT tonight you help me make stirfry sauce!!!!

suggestions? ive got pretty mch whatever. I dont have any mirin or fish sauce though.

cornstarch, brown sugar, ginger, garlic, ground red pepper, chili paste (or chili sauce), soy sauce, vinegar, chicken broth, five spice, water

I suck at stir fry too, but it's really hard to screw it up too bad if you have these ingredients. Save the corn starch and water til the end, then just thicken it that way, and adjust flavors.

And if you have scallions to chop up and add at the end, you're golden.

dont forget the shrimps,mussels and such, ah yes and the saffron...

I agree. White chicken meat is bone-jarringly boring.
I think I read somewhere that the Chinese value dark chicken meat more and charge accordingly in their markets.

"I ain't eatin' NONE of it."

The only paella I have had is Spanish paella. I really didn't even know there was such a thing as Mexican paella.

The original, Valencian paella sounds fine by me: chicken, duck, pork, snails, beans and rice. I would eat that all day long.

Seafood paella also sounds ok: shrimp, fish, clams, etc, hold the beans. OK.

But when you find a mussel and a piece of veal or lamb on your fork at the same time, I call timeout and huddle up, or call an audible and ask for the roast suckling pig Segovia style. The rest of the table can marvel at the wonders of the paella compost heap before them, washing it all down with fruit-laced red table wine.

Maybe I doth protest too much, but hey, there you have it.

It probably doesn't help that I really don't care much for rice.

I mean seriously, if you love food, doesn't paella seem about as unrefined a dish as you can find? What is your palate supposed to think when it is chewing a piece of calamari and a hunk of veal at the same time?

I LOVE surf and turf, done right.

I agree that it sounds as you describe, but I just think paella tends to be too indiscriminate in its pairings.

I mean, a hunk of fish and a piece of chicken? Sure. A piece of tenderloin and a lobster tail? Of course. A jumbo prawn and a piece of roasted pork? Close, but ok.

A piece of squid and a chicken thigh? Nah. A slice of veal and a mussell or even a clam or a shrimp? No way. A cow's heart and a whole conch? I'll pass.

You get the point.

I like them both very much. I prefer Jambalaya to gumbo.

Meanwhile, the meat generally used in these dishes is sausage, and the seafood tends toward shrimp and crawfish. I see no issue whatsoever with these combinations, and I LOVE the spices. I don't really even mind the rice.

Go figure.
