Columbia-



I made bandeja paisa.



First I made the hagao



Meanwhile, I pressure cooked the beans.







I made the meat with hagao and bacon.



I made the arepa.



Fried the egg and plantains, sliced the avocado, and put it all together.



Man this was a lot of food. Enough to feed an army, or at least a Girl Scout troop. This was the first time of pressure cooked beans. I'm never going back. Perfect beans in under an hour with no soaking.

We made Chile tonight. We kinda thought the sweetness of the corn was an asset to the dish, not a detraction. With the raisins in the beef, it seemed like it was supposed to be a sweeter dish top to bottom.

Especially for people who have trouble finding the time/motivation to cook for themselves, I think a pressure cooker is the #1 appliance I would recommend to buy. They're pretty much fire and forget and they cook big quantities of really nice food. I make a ton of stuff like bolognaise sauce and soups in mine and use it as the basis of my lunches for most of a week.

IDK if this really fits in with the gourmet cooking theme of the thread, but w/e. I'm a pressure cooker evangelist.

Short on updates, and short on updates of food suitable for dinner for a couple that's losing weight, we did a call back to Ivory Coast tonight. And I'm never going back to boning and cutting up a whole chicken. Prepackaged thighs 4 lyfe.

I dont know about boning the thing, but I am an extremely amateur cook, and I think cutting up a whole chicken into 8 or 10 pieces is pretty easy, and way, way cheap. Wifey likes breast, so I get everything we want.

Around me, precut thighs go for about the same price as whole chickens.

Nigeria-



We made asun



First we trimmed the goat meat, seasoned it, added onion and put it in the pressure cooker.



Then we sliced and pounded a chile pepper and heated it with the juices from the pressure cooker.



Then we broiled the meat.



Plated-



So good, spiced just right. Another pressure cooker achievement unlocked. I'm adding this in to the regular rotation. It's fair season. Perfect time to but a goat or two from FFA or 4H kids and stock the freezer.

Argentina-



We made criollo stew.



First we sautéed the onion, garlic and bell pepper then browned the meat.



Next we added the stock and vegetables over the course of an hour.





Plated-



The meat came out alright, but the dish was too sweet. It only has a tablespoon of sugar added, but it was unnecessary.

Germany-



Congrats to Germany!

We made hassenpfeffer.



First I fried the bacon for grease, reserved the bacon, then browned the rabbit.



Then we sautéed the shallot, added the wine, water, and spices, and returned the rabbit to the pot.



After the rabbit was tender we removed it and thickened the remaining liquid, then served over the rabbit.



This was amazing. One of my favorites. It was mrscrashjr's favorite of the entire World Cup. I brought it to a potluck at a campground event and it disappeared quickly among a group that goes out of its way to try to out do each other with the camp cooking.

We made Italy last night, with a few modifications. We really enjoyed it. We didn't make our own pasta. Instead, K brought home a package of Barilla penne that was made with tomatoes and carrots. It added a nice extra vegetable flavor to the dish. Also, swordfish was apparently nowhere to be found around us, so we had halibut, with a simpler preparation.
