Do whatever makes you happy! If you are playing to support yourself financially you will run into problems with only two tables.

Eventually you'll get comfortable enough with most decisions that you can add a few more tables. I wouldn't worry too much about it if you're just starting out in poker.

work on your c game really hard by playing a lot of hours at a lot of tables. play much lower stakes to minimize the costs you'll incur while you're starting to learn to get better.

keep playing at those stakes until you grade your C game to at least a B+ C game you don't need an A C game to move back up in stakes because thanks to the volume you'll mostly be playing your C game versus other C games and if your C game is a B+ or better you'll surely crush C's and even C+'s

You don't have to work on playing more tables at a time. If you feel comfortable and enjoy playing 2, that is fine. If you feel more comfortable playing 1, that is fine too.
There is no reason why you should force yourself to play more table than you feel comfortable with.

Just because some others do, doesn't mean you have to. Out of those players who play many tables at the same time, many would actually improve their game if they didn't.

If you want to make more money, you can work on thinking through decisions faster to add more games, but don't feel bad if you don't want t do that.

You will also be able to enjoy sweaty degenerates telling you the same bad beat story every day, berating you for raising your big blind and some awesome strategy talk. Additionally you will play like 12 hands an hour, because everyone tanks like they are on tv.

You could however play in the comfort of your own home, playing 24 hours a day whenever you want and if you're done for the day just get up and walk to the next room and go to bed.
