Chuck: I'd suggest stuffed peppers with quinoa, carrots, beans and chicken.
I also regularly cook up a full pork butt in the oven, shred it, (freezing half) and proceed to use pulled pork in various recipes throughout the week (fajitas, sandwiches and so on). Real valuetown for those days when you cannot be ****ed to cook, and bbq pulled pork on poached eggs with sourdough (spread with dijon) does wonders for fuel all day -- allows me to snack on salads/veg throughout the day without the need for another big meal.
Also if you have a farmers market anywhere near you (usually on the weekends) I highly recommend you go drop money on fresh picked cherry tomatoes. Once you start the fun don't stop.

Went to the stratosphere last night, had the Turf & Quack which was a 10oz steak, duck and foie gras. Was as amazing as last year when I had the same dish. Friend took a photo so I'll post as soon as he puts it online
