-USA (4 times, going back this summer after this I will have visited 15 states)
-UAE (Just once for a couple of days)

Latvia: Nice trip. Probably saw everything I needed to though. Ventspils was a very nice coastal city. Cesis was also very nice. Riga was okay. Nothing bad, but nothing too special either. Lithuania: Only saw Vilnius. Great city; very underrated. I expected it to be much more "Soviet". It was very modern. Not quite as modern as Copenhagen, but surprisingly close considering where they were a quarter century ago. Highly recommended for a couple days.

Romania: Now this country still had a lot of the drab Soviet-style architecture you might imagine. Very interesting. Definitely felt like I had gone back in time a little, despite being in the EU.

Denmark: Actually did this for work. There was a company that needed a test done that our lab specializes in. But for some reason, the protein couldn’t leave the country. So they asked me if I wanted to go and that the company would pay me 2x my salary at the time. Umm…..yes……? Brought my then-girlfriend over for two weeks after I finished. Amazing opportunity; great country. Would go back in a heartbeat if given the opportunity again.

Iceland: Did drive all the way around. Then flew to Greenland for a few days because it was there. Got sunburned in Greenland (not many can say that). Favorite part of the trip was either snowmobiling on one of those unpronounceable glaciers or spending some time in and around Akureyri, a delightful small town in the north. Rekjavik is a bit overrated, though they did move the penis museum there that IBD always comments about in every Iceland discussion.

We had a friend and her kids over this week. She went to Aberystwyth uni but live in Leeds now. I had a conversation with my neighbor in front of her after which she said "wow you've learned Welsh really fast". We were talking English

Thanks for the response; this is really cool. Looks like I'll have to add Vilnius to my city wishlist; that sounds right up my alley. Pretty funny that you worked in the "unless they were part of the former USSR" loophole; that gives you a ton of great destinations to choose from. Between Latvia, Lithuania, and Romania, which had the best food?

I have a suspicion that you're really going to love Prague, btw.

I never get to go anywhere for work, so five weeks at 2x salary (!) in Denmark and then another two weeks tacked on at the end sounds like a dream. I'm envious.

My parents and I spent an afternoon in Akureryi when we were in Iceland; it's a funny story that merits its own post.
