I usually go for somewhere around the top 10% of hands.

I think 10% is kinda nitty. I 3 bet hands like JT QT KT AT KJ 99 88 77 J9s against someone not folding to 3 bets. I think there is a ton of value in them so I would say around 16% or so maybe even more
