It's my guess that you will be safe with Stars or Tilt. They appear to be able to cover their own a**es by the steps they take. I sent Stars a letter because I live in Michigan and we are one of the states that was on Doyles Rooms' list of "bad states".
There was and probably still is the thread that discussed "domain name seizures" and it sounds like this is a big no-no for a state to try and do. PokerStars and Tilt are operated off shore and cannot be touched as far as I understand.
I was a little worried yesterday but after reading up a bit I feel like the only real threat is the original UIGEA problem that we have. I'm not sure why Cake would block you and why other sites aren't taking US players, unless it's just because their names are registered in the US. I don't see what they have to lose if they take Americans.
But FWIW your probably safe with Stars or Tilt.
