I dunno there's something about classical music mixed with methodical killing and high end cooking that makes it a very powerful combination.
I like the pacing of S2 quite a bit more than S1 (and S2 is quite a bit better so far imo)
I can't point to a single flaw with Hannibal. Everything is great and well executed. The stories are great. All of the characters feel authentic. It weaves in and out of a long branching story arc and you might not be aware of the connection until episodes later.
