As far as I can tell the Texans' O is largely run to set up the PA pass, and largely AJ+TE dependent. Bootleg heavy.
Manning has traditionally run a pass to set up the run/draw and he utilizes 2-3 WRs and also uses his TE a lot. Both have concrete feet. But Schaub rolls out and uses the bootleg more to buy time to look downfield. Peyton has traditionally been quick drop and quick release.
His offense is much more up tempo and no-huddle and Schaub's is slow tempo, constant huddle.
I mean I guess they are more different than I realized but I don't see how Kubiak and Manning can't adjust to eachother.
EDIT: Schaub is also Kubiak's robot and they run nothing but scripted plays. Manning obviously is more creative and looks for the D's weakness at the line and tries to take what is given. I just don't see what the snafu would be there. Just tape Kubiak's mouth shut and let Peyton run things. Don't see how much can go wrong with Daniels/AJ/Foster at his disposal and an elite blocking line.
