The right question to ask is not what the variance is but how the expectation for the expert relates to his standard deviation in the short run, and in limit hold 'em this relationship is fine. However, in no-limit hold 'em cash games, against weak players, this relationship is out of balance in favor of the expectation being too high, thus the games in the long run can choke off.
The fact that starting hand charts might look similar between no-limit and limit hold 'em games is not the issue. Put another way, proper strategy and the effect of proper strategy are two different issues.
