A tandem kayak could be cool, but might make it a bit slow if you want to eventually go out on the water by yourself. Canoes are always fun too, though.

It comes with a total of 3 rod holders, but the one in the front is way too far forward to be practical imo.
There's a lot of storage space in this model. The bow dry hatch is huge by itself, but between that and the sternwell area, you honestly don't need much more space. If you do, a kayak probably isn't your best option.
I plan on adding tons of mods - probably at least two better placed rod holders, a fish finder, and I'm possibly going to build my own outriggers to make it stable enough to stand on.
It's a 12 foot kayak, which makes it somewhat awkward to put on top of my compact car, but it works. I have no roof rack - I just use a kayak carry kit which consists of two foam blocks, a strap, and a bow/stern tie.
I don't think I'd ever like having a sit-in kayak after owning a sit-on-top. More storage space, less having to bail water out, less chance of drowning.
I love my kayak so far, but for your purposes, you might be better off with a canoe if you're looking to take people on the water with you now and then.
