More players are doing this it seems, seems tilting when you're not sure if your opponent has a higher flush draw straights etc

But you can still view their cards in the replay, so why are they doing this?

I don't remember what the default setting in the Pokerstars client is, but this card display can be toggled on/off in Options -> Showing/Mucking Hands -> Show Hole Cards When All-In (Ring Games).

Personally, I have it off on purpose to avoid the temptation to sweat the all-in, getting distracted from other tables (because it works both ways - if either myself or one of the opponents have it off, their cards won't be shown to me; and as mentioned, the replayer will show them anyway if needed).

Maybe I should turn it on to have other players entertained, though.

idk, I thought so too, but if what coon74 saying is right (that it works both ways), maybe people don't wanna sweat the all-ins

Don't think you can see the cards if you have "auto-muck losing hand" selected?

Sometimes I make dumb calls and bluffs and I'd rather they not be on show as you table top set

You can see the hands in hand history and HUD's show them instantly after the hand, even though you muck them in client.

Actually, I may revert my setting to showing hole cards (to entertain fish) after I write a hotkey script marking the current hand for review in PT4.

As it is, I'm too slow at doing it manually, and as a result, sometimes the wrong (next) hand gets marked instead of the target one.

So as of now, I prefer to wait for a hand to finish to have it marked and see opponents' hole cards on the mucked card display. Hence, after I gii, I have no good reason to keep focus on the table until the hand ends and want to guard myself from the bad reason (sweating) when I can't occupy myself by marking the hand and starting to write a note.

Or probably I should just habitually open the note editor when I gii, drag it so that it closes the board, start writing the note and then add a description of opponent's hole cards into it once the MCD shows them. So thanks to IIIIII for inducing a good idea!

That said, there are uninteresting spots that don't require note-taking, e.g. in HU preflop stackoffs, it's usually pretty clear what we both have and the hand usually gives no additional info about the opponent.
