US wild crawfish season runs usually runs February through June, depending on the weather in LA, MS, TX. US farmed crawfish extend the season a bit on both sides.
When you eat crawfish at Popeye's, they are definitely frozen and unless they're advertising that they're American they are almost certainly Asian. US producers claim the Asian stuff isn't as good, but that doesn't keep people from buying it for frying, etouffee, gumbo, and jambalaya.
