I'll start.

If you like the taste of two separate foods, they go well together. There is no combination of food tastes I've experienced that stops this being true. It's also the only predictor. There are no average or bad foodstuffs that combine to make a good overall taste, and there are no good foodstuffs that combine to make a bad or average taste. Chocolate and cheese. Coffee and wine. Pineapple and pizza. If they're both good, the combination is automatically good.

Huh that's probably a good exception to my rule. Citrus + dairy = no good. So any two foodstuffs that separately taste good and don't contain chemicals that react with each other = good tasting combination.

Chocolate and hamburger sounds delicious, I don't really eat much meat but I'll try it next time.

I don't really like gin.

I'm way on the other side of this. E.g. I have a huge sweet tooth, but can't stand anything sweet in non-desserts (pineapple pizza, grapes in chicken salad, sugar in spaghetti sauce, etc)
