Not sure where people are buying their eggs, but consider buying local eggs from pastured chickens. ( You want free range, insect eating chickens. The omega3 / vegetarian / grain fed ones are crap ).

Going to do a poached egg and shaved black summer truffle dish with my family in CO. Buying one at Eataly today and will be the first time I have had it outside of a restaurant.

Today I learned that putting Corn in an omelet is the ****ing nuts
Corn
Asparagus
Green Bell Pepper
Onion
Ham
Cheddar
Start the GBP and Asparagus first, that takes longer to cook. Once you've got a good sweat going, add the onion and ham (my corn was already cooked). At this point I like to cover it to steam it nice and quick. Once it was almost done I added to corn to heat.
Key to the good omelet filling is to put in a super thin layer of cheese before you add in the toppings. Then obv more cheese on top.
I got more white this time, and my pan was slightly too hot so I got a little browning
Corn in there was so A+++, super sweet and a nice pop.

Looks very tasty. Personally, I would never put corn in an omelet, but that's because I have some weird aversion to corn as an ingredient in most anything.

i never would have thought of it either, but holy **** it was good. corn would have to be fresh and sweet to stand out though, not canned crap
