I bet there are also a couple nice small roasteries close to you where you can get fresh roasted beans, ground to the level you need them (i.e. for cold brew) and ask for advice what kind of beans or blend would match your coffee preferences.
3-5 years ago, everybody wanted to open up a (craft) brewery. Over the last year, I've been to at least 5 presentations of people who opened (or looked for money to open) a coffee business that included in-house roasting.
A couple of years ago, I met the guy who owns
http://www.theroasterie.com. His story started over 20 years ago with him roasting in his basement and going business to business for a month until he sold his first 5lbs bag of coffee to one of them. Today they are one of the biggest roasters in the Midwest.
