So I've been eating steak every other day for a couple weeks now and loving it. Friday I went to take an annual physical for my job, and they want me to take some samples of my poo for them! ROFL! They say I can't eat steak for a couple days so blood won't show up in my stool.... and they sent me home this kit that I'm supposed to smear some poo on a slide and mail it back to them. Wat?

Don't know which is worse, not being able to eat steak for couple days or having to sample my own poo.

This video baffles me. I've heard very good things about this dude as a chef. The paste thing, yeah okay, the butters and the sauce look bizarre and not appetizing. He made a so called bbq sauce for a steak? Really? He calls it frying a steak?

Also, he says the meat is ready 'when the blood surfaces.' I've seen other people say stuff like this too, does he really not know it's not blood? Gordon Ramsay has said many times in online videos that searing seals in the juices. BRITISH PEOPLE, DEFEND THYSELVES.

Ugh i dunno what to say about that video... Ive never been impresse by any of his videos tbh, how a top chef doesnt know that stuff isnt blood or that his sear was totally uneven ill never know... And +1 at the wtf BBQ sauce...

Of course the 24 hour thing is ridiculous but at least he manages to get through the whole thing without any sealing/locking in of juices.

Filet w/ redwine mushroom onion pan sauce

Over cooked just a little(I like my filets super rare), but peppered after cooking which I will def be doing from now on. The pepper flavor came through way better instead of getting burnt away from cooking. Also bought a bunch of green peppercorns so gonna make a cognac peppercorn sauce sometime soon. Also with the potatoes added some chopped up dried chilis which was good addition.

I still need to find a source for some good looking ribeyes, cause the grocery store I've been going to isn't consistent.

Its prob been said by the time ive posted this. Its an advert. He was one of the all the time great chefs, but sold himself out to become a gastro-pub whore, and advertises Stock Cubes, and turkey drummers. His reasoning being thats the food he grew up with. Its accessible and an easy way for people to home cook half decent home food.

The sealing in juices thing is just a semantical issue, searing does improve juiciness. And so is the blood/ myoglobin thing.

He cooks it at 50 degrees then blow torches it. Basically sous vide right?

His restaurant was regarded best in the world. Not bad for someone who taught himself to cook

How about a more likely explanation like that particular test may be unable to distinguish between hemoglobin and myoglobin (so the myoglobin could yield a false positive).
