Had a few friends in town and decided to fire up my smoker again....

Costco choice prime rib about 5 lbs

Smoked at 250F until IT of about 125-128 and rested for 15 minutes. Needless to say it was delicious.

Did you do a final oven sear? I usually do for about 6 min at 550 after smoking. But even if you didn’t, would still smash.

Yeah forgot to mention I threw it in the oven that was like 425 broil for about 5 minutes to crisp up the outside. Leftover cold smoked prime rib sandwiches might be my all time favorite leftover

Lol thank you, the shredded cheese was melted by the time I sat down to eat. If I’m not drunk by the time I eat I will zap it for 15 seconds to help the melt
