Of course it's nearly perfect - just a callback to a few weeks ago.

Saw this pasture raised strip at WH for 13.99 a pound. Guess its not all pricy at WH.

I reckon, but this was shipping "direct from supplier", which we both know is in LA, to DC metro. And it was 20 lbs. And I'm pretty sure it was considerably cheaper than my last order, which was for less meat.

So a very tasty experiment today with our last prime NY strip. Team Pan, cooked medium high the whole way in Land O Lakes spreadable butter (taken off at internal temp of 125), using frequent flips and basting. The canola oil inside seemed to slow down the butter's breakdown. I think I've cooked prettier ITT, but taste wise this was easily in the top 20%. I'd love for someone to try this technique and post your results.

It's gonna be a real shock to the whole steak cooking world if that line of experimentation is continued and results in finding the optimal steak preparation is cooked in margarine!

I bet there's a like a local max on the butter product curve we have to find. Something like:

Butter--good
Spreadable butter--better
I Can't Believe It's Not Butter--best
Margarine--back to good.

I have extensive experience experimenting with all permutations of grilled cheese. Mayo gets bread crispier, but butter gives better flavor. Optimal I've found is butter plus a little mayo. But not enough difference to actually bother with using mayo.
