I cook all of my steaks on a propane grill. I can not compete with the steaks posted itt. Having said that, these Grill Grates will give you a hotter cooking surface than you can otherwise get. (They are also available on Amazon with a ton of reviews there.)

lol I wasn't going to say anything, bigdaddy is probably a top three poster itt but the recent post seemed to have more greybeard than typically seen in your posts. Still better than 99% of my steaks.

Thanks for the post I may need to get some of these for my Weber kettle. If you made the investment in those grates I'd definitely make the investment in a $20 thermometer.

Thanks. I've got the thermometer--just been too lazy to use it for steaks as I've been used to doing it by "feel" before I got these grates and been pretty good with that. But now I think I need to use the thermometer.

I did use it tonight on some burgers--big difference. Can't wait to do it with steaks.

Could you provide more details on this method? I've always marinated then seared thin cut short ribs, this braise sounds interesting.

-season with salt only before the sear, add pepper later
-you might want to leave them in longer than 2-2.5hrs depending on how tender you like them

If I went to someone's place or heck a steakhouse and I had that steak on my plate I'd be very pleased but comparative to a Bigdaddy post he generally posts better

Happy Memorial Day steak friends.

I think I'm going to make the bold claim that steak cooked SV in butter and garlic slices is the pinnacle steak experience. This was a Prime NY strip, SV at 127 w/garlic slices and butter. Seared 45 sec/side peanut oil and finished 30 seconds/side in butter. The garlic butter got infused in the fat on the side. Bliss ensued.

Anyone know how hot is too hot for a good cast iron pan sear?

I just bought a brew kettle floor burner that is 140,000 btu's. I'm thinking of throwing the cast iron pan on there and searing off a couple of steaks.

Will probably have to re-season after, but do you think it's worth a try or too much?

When things burn. Excessive smoke is a bad thing. If you're going crazy hot it would probably be best not to use any oil unless you want to burn your house down.
