Maximum value from BIG fish can be Risky

I am a small stake player, 2/5 5/5 once in a while. So its 4 in the morning the stacks are big i just sit with 500 in a 5/5 game at a club in NYC. This is normally a very loose and crazy game, it plays very big.

I win 3 decent pots build my stack to 1500ish. Then I see AA. I am in MP with around 1400 behind. Donkey/fish/villain has me covered with 1600ish.
Pre Flop:
Donkey EP makes it 40, I 3 bet 105. Call. Pot: 220.
Flop: 367.
Check. I bet 165, Call. Pot: 550.
Turn: 8.
Check. I bet 330, Call. Pot: 1210.
River: 8.
Check. I ship. I get snap called.
I flip over aces, he says no good and flips 108.

What do you guys think about this hand and should I have pot controlled more or I should go for maximum value there against a fish who will call anything? I put him on 10s through KKs and felt the river was very safe and he checked weakly. What kind of hands should I put him on based on the flop, turn, river. I would like some other insights and thoughts thanks.

I'm relatively new here but I'll have a craic...

I'm working on the assumption that by "donkey/fish/villain" you mean somebody who (based on this hand) makes loose raises preflop and pretty thin calls postflop.

PRF: Seems pretty standard, maybe 3bet a touch more if villain is making loose calls preflop. 140-150ish

Flop: Maybe raise a bit more, 3/4 to full pot seems about right

Turn: Seems alright.

River: Not sure about your all in here. As played you're sat with about $800 facing a pot of $1210

He's called big bets on the flop and turn on a low board with a possible straight. AA is beginning to look a touch vulnerable with 160ish BBs behind especially now the board has paired.

You're beating overpairs and 7x/6x connector type hands that didn't get there. These might call a small river bet rather than raise it.
You're loosing to 8x connectors, 33, 66, 77, 88, and the straight.

I think it's difficult for us to make much of a value bet that JJ etc might call without pot committing ourselves to calling a check raise from villain.

It doesn't feel especially satisfying but I think I'd probably check behind.
