1) zest limes
2) add to grain alcohol (195 proof)
3) wait 4-6 weeks
4) remove lime zest and filter
5) add same volume of simple syrup .... 2 parts water 1 part sugar
6) wait 2 weeks +
7) chill in freezer
8) sip carefully
Edit: there are many recipes for Limoncello on the internet. Limecello is exactly the same, but with limes instead of lemons. Most of them are good, but some suggest it can be done with regular vodka ... they are wrong ... it can't. And many suggest simple syrup should be made with equal parts water and sugar, but for our tastes that is too sweet.
