The hands per hour will obviously affect your hourly expectation, but that's all. Hands per hour will be closer to 100 -- it depends on the number of players, but 100 is a good average in a good game.
When looking for a game you need to balance the table minimum wager, strategic minimum spread, and available bankroll. Another rule of thumb -- you want a bankroll of ~200 top bets -- that's about a half-Kelly when you find a good game and a full Kelly in a marginal game. So ... in your example where you have $500 to play with -- let's do it backwards. You need 200 bets, so your
top wager is $2.50. You will need a minimum spread of about 5:1 -- so you need to find a 50 cent table, and spread .50-2.50 to win. You'll make about $2.50 to $3.75 an hour in a really good game.
Likewise, in your $5-25 example, you'll need a bankroll of $5,000.
