The business would sell and deliver freshly prepared and portioned ingredients for recipes on its menu. Order-in the dish's ingredients and then do the cooking yourself.
All farmers markets should do this. A separate stall selling recipe portions from stuff around the market. As the seller you would have to be quick on your toes to deal with stuff selling out and so on. Fun challenge. I think it would definitely boost overall sales at a market. At your average retail store not so much because people aren't there with the mindset to try new things.
