If the bug occured because the server misinterpreted hand values, this is basic logic that got screwed up. If their software lacks reliability, what makes you think its not possible that someone already breached their software, or that the code in the first place has some funky programming.
Cake better give a good reason on how this happened

Not defending Cake totally because there's obviously a problem. However, it is very easy in software development to have some bug that only shows up under circumstances where an extreme set of events occur so it's not fair to say they have zero integrity checks. Given that this doesn't seem to happen on a regular basis (or we would have heard about it before), this seems likely to be the same case here - a very unusual set of circumstances that is probably not explicitly tested for; probably a disconnection/timing issue.
With regard to the logging, I assume Lee meant they are turning on some extra debugging to try and catch the issue. Presumably, this sort of debugging wouldn't normally be turned on because of the performance hit.
I would say it is highly unlikely that this occurred because the software misinterpreted hand values; if that were the case you would have seen this problem many more times already. All software has bugs in it, and just because it has a bug doesn't mean it has been breached - if there were cheating going on do you really think they would be doing it at the $4 games and making it as obvious as shipping the pot to the wrong person?
Is it good that this has happened - no, obviously not. However, contrast the way Cake have handled it (so far) to the way that UB handled their similar issue; that should give you some confidence. The sky really isn't falling, and I shall be continuing to play on Cake.
